Homemade kombucha is packed with probiotics that support gut health and digestion. Kombucha contains antioxidants that can boost your immune system and help detoxify your body. Customize the flavors to your liking for a healthful treat!
Ingredients:
- 1 cup sugar
- 8 bags of black or green tea (or 2 tablespoons loose leaf)
- 4 cups water (for brewing)
- 4 cups cold water (to cool down the brew)
- 1 SCOBY (Symbiotic Culture Of Bacteria and Yeast)
- 1-2 cups starter tea (from a previous batch or store-bought kombucha)
What you'll need:
- Wooden spoon
- 2 jars (34oz / 1000ml each)
- Jars cloth cover (for covering)
- Thermometer stickers and tracker bands (to monitor temperature and days)
Steps:
Prepare Sweet Tea
Boil 4 cups of water, remove from heat once boiling.
Add sugar and stir with the wooden spoon until dissolved.
Add the tea bags and let infuse for about 10-15 minutes. Remove the tea bags.
Add 4 cups of cold water to cool down the mixture.
Combine Ingredients
In one of the jars, combine the cooled sweet tea with the starter tea. This will help kickstart the fermentation process.
Add SCOBY
Gently place the SCOBY into the jar with the tea mixture.
Cover the Jar
Use the cloth cover to secure the jar.
This allows the mixture to breathe while keeping out contaminants.
Fermentation
Place the jar in a warm, dark place (70-85°F) for 7-14 days. Use thermometer stickers to monitor the temperature and tracker band to monitor time and days.
Check the flavor after a week. If you like it tangy, let it ferment longer.
Bottling
Once fermented to your liking, remove the SCOBY (set it aside for your next batch) and pour the kombucha into the second jar using KiiZYs' spatula.

You can add flavors such as ginger, fruit or herbs at this stage.
Second Fermentation
This step is optional. If you want fizzy kombucha, seal the jar with a cloth cover again and let it ferment for an additional 3-7 days. Be sure to monitor it to prevent over carbonation.
Once ready, refrigerate and enjoy your homemade brewing.
